There are a variety of contraptions on the market for opening a bottle of wine. There are battery- powered corkscrews, the Rabbit, and everything in between. Sometimes simplicity beats complexity, and the double-hinged corkscrew is a prime example. They’re used by waiters and bartenders all over the world, and for good reason. They’re really easy to use and you won’t break the cork.

Here’s how to use the waiter’s friend AKA the double-hinged corkscrew.

  1. Push the tip of the corkscrew into the cork.
  2. Twist until the corkscrew is about three-quarters of the way into the cork.
  3. Engage the base hinge with the lip of the bottle and pull upward gently.
  4. When you can’t pull anymore, engage the second hinge with the lip of the bottle.
  5. Gently pull the rest of the cork out of the bottle.
  6. Pour, look, sniff, sip, and enjoy.
